Tips for this week’s Plan
Don’t worry about following the plan exactly. Change the order of the dinners, swap vegetables, or use the sides you already have on hand.
Check your pantry before shopping. Olive oil, garlic, dried herbs, rice, and other pantry staples show up throughout the week, so you may already have quite a few ingredients.
Buy plenty of lemons. Lemon is used throughout this week’s recipes, so having a few extras on hand will save you another trip to the store.
Prep some of the produce ahead. Wash and chop sturdy vegetables and herbs when you have time, but save cucumbers and tomatoes until closer to serving so they stay fresh.
Make extra Greek lemon rice. It works well with the chicken meatballs and lamb chops, so one larger batch can take care of sides for more than one dinner.
Reuse the sides. If you make tzatziki, a Greek salad, roasted vegetables, or another Mediterranean side, make enough for another meal. There’s no need to prepare a different side dish every night.
Make the Turkish yogurt cake ahead. It keeps well in the refrigerator, so you can make it early in the week and have dessert ready whenever you want it.
Make pita and hummus ahead. Homemade pita bread and hummus are easy extras to have on hand throughout the week, and they pair well with several of these dinners.
