  • 2 pounds boneless skinless chicken thighs, or boneless, skinless chicken breasts

Vegetable Salad

  • 2 cups cherry tomatoes, halved
  • 2 cups English cucumber
  • ½ small red onion, thinly sliced
  • ¾ cup Kalamata olives
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt
  • teaspoon ground black pepper

Tzatziki

  • 1 cup plain Greek yogurt

  • In a large bowl, whisk together the olive oil, lemon juice, lemon zest, garlic, rosemary, thyme, oregano, salt, pepper, and red pepper flakes.
