Cheesy and creamy with that perfect buffalo sauce kick, our Buffalo Chicken Pizza is absolutely delicious. We use our Fast Pizza Dough for the crust and load it up with all of the fixings, including homemade buffalo sauce, three varieties of cheese, tender shredded chicken, and two types of onions. Bottom line: it’s quick, easy and amazing.

Each slice of this buffalo chicken pizza is a flavor party! We like to top our pizza with blue cheese dressing for that bold, blue-cheese-and-buffalo flavor combination, but you can certainly skip it and use a ranch dressing if you prefer.

Best of all, this buffalo chicken pizza recipe is simple to prepare and is doable even on busy nights. That means any night can be pizza night, and that’s worth getting excited about.

Since we recently got an Ooni pizza oven, we are including instructions to bake the pizza in an outdoor pizza oven as well as a standard home oven.

Buffalo Pizza Ingredients

The ingredient list is short and sweet for this homemade buffalo chicken pizza. It comes together easiest with already-prepared pizza dough and buffalo sauce. We prefer homemade but you can absolutely go the store-bought route to simplify the recipe even more.

To make it, you will need:

  • Pizza dough. We have several recipes for pizza dough (see below) or you can buy premade pizza dough in the freezer section. Frozen bread dough will also work in a pinch.
  • Buffalo sauce
  • Blue cheese or Ranch dressing
  • Shredded, cooked chicken. Use leftover roasted chicken or a storebought rotisserie. You can even toss frozen chicken in the pressure cooker to make shredded chicken in a flash.
  • Mozzarella, shredded
  • Cheddar cheese, shredded
  • Red onion, thinly sliced
  • Crumbled blue cheese
  • Green onions, sliced

If you have a sourdough starter, we recommend a flavorful sourdough pizza dough. Our whole grain einkorn pizza dough also has an amazing flavor from the whole grains. How to Make the Pizza

This buffalo chicken pizza recipe will make between 2-4 pizzas, depending on the size of pizza you choose to go with (see recipe tips for more info).

As for baking them, we tested the pizza in a standard oven as well as an outdoor oven, and both work out great. Either way, you’ll end up with a superb buffalo chicken pizza.

  1. Preheat the oven: If using a standard kitchen oven, preheat it to 500°F. For a pizza oven, heat it to 920°F.
  2. Shape the pizza dough: Divide the pizza dough into 2-4 round balls, then stretch and shape each on a floured surface.
  3. Assemble the pizza: Mix half of the buffalo sauce with the shredded chicken and use the rest for pizza sauce. Add the toppings but don’t pile them on too thick.
  4. Bake the pizzas: We baked these pizzas in a standard oven and in our Ooni pizza oven. Check the recipe card for instructions.
  5. Enjoy: When the pizzas are done, remove them from the oven and top them with sliced green onions and an extra drizzle of the ranch or blue cheese dressing. Serve and enjoy!!

Pro Tips for Homemade Buffalo Chicken Pizza

  • One pizza dough recipe will yield four 12-inch pizzas. If you’re using an outdoor pizza oven like the Ooni, we recommend making four smaller pizzas. But if you’re baking them in a regular oven, you can make two larger pizzas or sheet pan pizzas.
  • Rotate the pizzas if using an outdoor pizza oven (like the Ooni).
  • If you lower the temperature of your outdoor pizza oven, simply bake the pizzas longer.
  • For a crispier crust, preheat a pizza stone for 1 hour in a standard oven before cooking the pizza.
  • Ranch dressing or blue cheese dressing helps mellow the heat from the spicy Buffalo sauce. Use more or less depending on your tolerance to spicy, hot foods. Cheese will also mellow the spice level.

Ingredients

  • 1 pizza dough recipe
  • 1-1/2 cups buffalo sauce divided
  • 1/3 cup Blue cheese or Ranch dressing divided
  • 2-1/2 cups shredded cooked chicken
  • 12 ounces shredded mozzarella
  • 4 to 6 ounces shredded cheddar cheese
  • 1/2 red onion thinly sliced
  • 1/2 cup crumbled blue cheese
  • 4 green onions sliced

Instructions

  • Preheat your oven to 500°F (or an outdoor pizza oven to 920°F)
  • Divide the pizza dough into two to four round balls, depending on the size of pizzas you want. Stretch and shape each of the dough balls on a lightly floured surface.
  • Mix half of the buffalo sauce with the shredded.
  • Use the rest of the buffalo sauce to spread a light coating over each of the pizza crusts. Leave the outer 1” bare for a crust. Drizzle some of the Ranch or blue cheese dressing on top of the buffalo sauce.
  • Spread the shredded chicken mixture over the top of the pizzas, then top with mozzarella and cheddar cheese. Scatter red onions slices and blue cheese crumbles on top.
  • Bake in a standard oven for 12 to 18 minutes or in an outdoor pizza oven for 90 seconds. Make sure the cheese melts and the crust gets golden brown. 
  • When you remove the pizzas from the oven, sprinkle them with green onions and drizzle with Ranch or blue cheese dressing and serve. 

Notes

  • One pizza dough recipe will make four 12-inch pizzas. If you want to make fewer pizzas, you can freeze some of your pizza dough for another time. 
  • If you are using an outdoor pizza oven, make four 12 inch pizzas. If you are using a regular oven, you can make two larger pizzas or sheet pan pizzas. 
  • Make sure you rotate the pizza regularly if you use an outdoor pizza oven like the Ooni. 
  • If you lower the temperature of your outdoor pizza oven, simply cook the pizzas longer. 
  • If you use an indoor oven and you have a pizza stone, preheat the stone for 1 hour before cooking the pizza. The pizza stone will give the crust a crispier texture.
