While chips and salsa are (in my humble opinion) essential for summertime snacking, this fresh pineapple mango salsa goes above and beyond its conventional duties. It’s a zesty side kick to this Grilled Mahi Mahi, and adds a delicious splash of sunshine to a savory Puerto Rican pork Roast.

The fresh flavors make it an ideal side for summer barbecues, and it’s always a welcome addition to a fajita or burrito night.

  • Mango. Sweet mangos are the star of this easy salsa recipe. Make sure they are ripe. 
  • Red Onion. The onions give the salsa a nice bite.
  • Peppers. We used red bell pepper, serrano, and jalapeño peppers.
  • Limes. Adds tartness and brightness to the salsa and balances the flavors.
  • Cilantro. We love the fresh citrusy and peppery flavor of cilantro but if it tastes like soap to you, you can substitute it with parsley and a pinch of cumin or some freshly chopped basil.
  • Scallions. Also known as green onion or spring onion.
  • Salt to taste.

Substitutions and Variations

There are a lot of variations you can try with this pineapple mango salsa. Here are some ideas:

  • Add avocado – adds a creaminess to the dish.
  • Use different peppers – habanero will give the salsa more heat, while Anaheim or poblano will have a milder spice level.
  • Add pineapple juice instead of lime juice.
  • Replace the cilantro with parsley, mint, or basil if you can’t handle cilantro.

  • Let the flavors marinate. If you have time, try to make the salsa 20 to 30 minutes in advance. That will give time for the flavors to mingle, and the dish will taste even better!

Storage

Fridge: To store mango salsa, transfer it to an airtight container and refrigerate it immediately. The salsa will last 3-4 days in the refrigerator.

Freezer: We don’t recommend freezing mango salsa as it makes the texture of the fruit mushy when it thaws.

Ingredients

  • 2 to 3 large fresh mangos chopped
  • 2 cups fresh or canned pineapple chunks
  • ½ medium onion diced
  • 1 large red bell pepper chopped
  • 1 fresh serrano chili pepper seeded and finely chopped
  • 1 fresh jalapeño chili pepper seeded and finely diced
  • 3-4 fresh green scallions white and green, chopped
  • 2 tablespoons chopped fresh cilantro
  • ¼ teaspoon sea salt
  • 2 fresh limes juiced
