Recipe Tips
- Let your dough sit out for 30 to 45 minutes before rolling it. Cold dough is stubborn and won’t stretch easily.
- A generous brush of olive adds flavor and helps the crust get golden and crispy.
- Start with mozzarella and fontina for meltiness, then finish with Parmesan for that savory, crispy top layer.
- For crispy bread sticks, bake on a preheated stone, baking sheet, or in a pizza oven. For softer sticks, use parchment paper without preheating the pan.
- Let them cool for 2 to 3 minutes before slicing.
- Prepare the dough and toppings in advance, then bake just before serving for fresh, hot breadsticks without the last-minute stress.
- Serve with a variety of dips; try garlic butter sauce or ranch dressing.

Storage
Refrigerate: Store leftover breadsticks in an airtight container. They’ll stay fresh for up to 3 days in the fridge.
Reheat: Warm them in a 375°F oven for 5 to 7 minutes until the cheese is melty and the edges are crispy. Avoid microwaving as they’ll turn chewy.
Freeze Unbaked: Assemble the breadsticks, place them on a baking sheet, and freeze until solid. Transfer to a freezer-safe bag for up to 2 months. Bake directly from frozen at 450°F, adding 2 to 3 minutes to the bake time.
Freeze Baked Breadsticks: Let them cool completely, then wrap tightly in foil and place in a freezer-safe bag. Freeze for up to 2 months.

Ingredients
- 1 pound pizza dough, homemade or store-bought
- 3 to 4 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup shredded mozzarella cheese
- ½ cup shredded fontina cheese, or use all mozzarella
- ¼ cup grated Parmesan cheese
- 1 teaspoon dried oregano, or Italian seasoning blend
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon crushed red pepper flakes, optional
- Chopped fresh basil, for garnish (optional)
For Serving
- Marinara sauce, for dipping (homemade or store bought)
Instructions
- Preheat your oven to 450°F. Line a baking sheet with parchment paper or lightly grease it with olive oil.
- If using store-bought pizza dough, let it sit at room temperature for 30–45 minutes to make it easier to roll out.
- On a lightly floured surface, roll out the dough into a 10×12-inch rectangle (or about ¼-inch thick). Transfer it to the baking sheet.
- In a small bowl, mix the olive oil and minced garlic. Brush this mixture evenly over the dough.
- Sprinkle mozzarella, fontina, and finally Parmesan evenly over the top.
- Season with oregano, salt, black pepper, and red pepper flakes (if using).
- Bake for 12 to 15 minutes, or until the cheese is bubbly and the edges are golden brown.
- Remove from the oven and let cool for a few minutes. Slice the bread lengthwise into strips about 1 inch wide, then, cut across the shorter side once for medium-length breadsticks, or make two cuts for shorter breadsticks.
- Garnish with fresh basil, if desired, and serve warm with marinara sauce for dipping.
Notes
- If using store-bought pizza dough, let it sit at room temperature for 30–45 minutes before rolling it out.
- For crispy edges, bake on a preheated pizza stone or a well-heated baking sheet. If you prefer softer breadsticks, bake them on parchment paper without preheating the pan.
- These breadsticks are best served fresh but can be reheated in the oven at 350°F for 5 to 7 minutes.
- Some other options for cheese: provolone, asiago, gouda, cheddar, and havarti.
