The Ingredients

  • Meat: Bacon crumbles (or precooked bacon slices)
  • Produce: Onion
  • Canned goods: Pinto beans, Great Northern white beans, kidney beans, 
  • Condiments: Barbecue sauce, Heinz 57 sauce, maple syrup, Worcestershire sauce, Dijon mustard
  • Pantry seasonings: Brown sugar, garlic powder, smoked paprika, salt
  • Other: brewed coffee (optional)

Variations 

Smoky Chipotle Baked Beans: Stir in 1 to 2 tablespoons of chipotle peppers in adobo sauce.

Pineapple Baked Beans Recipe: Add 1 cup of drained, crushed pineapple.

Spicy Jalapeño Cheddar Beans: Mix in 2 chopped jalapeños and 1 cup of shredded cheddar cheese.

Tips for Success

  • For a deeper, caramelized flavor, sauté the onion before adding it to the slow cooker.
  • If you like your beans less sweet, reduce the brown sugar or maple syrup to suit your taste.
  • Go low and slow. Cooking on low for the full 6-8 hours allows the flavors to really develop.
  • If you want a thicker consistency, leave the lid off during the last 30-60 minutes of cooking to let some of the liquid evaporate.
  • Even though you are using canned beans that are already cooked, letting them simmer in the slow cooker will develop flavors and soften the onion.

Storage

Fridge: To store your slow cooker baked beans, let them cool completely before transferring them to an airtight container. They will keep in the refrigerator for up to 4 days.

Freezing: If you want to freeze leftovers, place the cooled beans in a freezer-safe container, leaving a bit of room for expansion. They can be frozen for up to 3 months.

Reheating: To reheat, thaw the beans in the fridge overnight. Warm them in a saucepan over medium heat, stirring occasionally until heated through. You can also reheat them in the microwave in short intervals, stirring in between.

Ingredients

  • 1 onion finely diced
  • 2 (15-ounce) cans pinto beans, rinsed
  • 1 (15-ounce) can Great Northern white beans, rinsed
  • 1 (15-ounce) can kidney beans, rinsed
  • ½ cup bacon crumbles or 8 precooked slices of bacon, crumbled
  • cup BBQ sauce
  • cup Heinz 57 sauce if not available, use ketchup or extra bbq sauce
  • cup packed brown sugar
  • ¼ cup maple syrup
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ cup brewed coffee optional

Instructions

  • Add the onion, pinto beans, Great Northern beans, kidney beans, bacon crumbles, BBQ sauce, Heinz 57, brown sugar, maple syrup, Worcestershire sauce, Dijon mustard, garlic powder, salt, and coffee (if using) to the slow cooker.
  • Stir everything together until the beans are evenly coated in the sauce. Cover and cook on low for 6-8 hours or on high for 4 hours. Stir occasionally if you can to ensure even cooking.
  • For a thicker consistency, leave the lid off for the last 30 to 60 minutes of cooking.

Notes

  • For extra smokiness, add a few drops of liquid smoke.
  • If you like a bit of heat, try adding a pinch of cayenne pepper or some finely diced jalapeños.
  • For slightly deeper flavor, you can sauté the diced onion in a skillet until softened before adding it to the crockpot.
  • If you need to make this recipe gluten free, omit the Heinz 57 and check the ingredient list on all the other condiments. For instance, some brands of Worcestershire are not gluten free.
