You don't need to use day old, cooked rice for this recipe. Start with raw rice and cook it with a delicious sauce. Bacon, frozen veggies, fluffy eggs, and precooked pork make this an Instant Pot favorite.

Set the Instant Pot to saute mode. When the pot is hot add the bacon and cook until it is brown and slightly crisp. Remove the bacon to a plate lined with paper towels.
Add the whisked eggs to the pot and cook until they look like scrambled eggs. Set the eggs aside with the bacon.
Add a splash of olive oil to the pot then add the onion. Saute until soft. Stir in the garlic and cook for 30 seconds.
Add the rice and water (or broth). Scrape the bottom of the pot to loosen any cooked-on bits (the liquid will make it easy to get the browned bits loose).
Add the soy sauce, Oyster sauce, Mirin, and sesame oil.
Lock the lid in place and set the Instant Pot on high pressure for 6 minutes (it will take 10 to 12 minutes to build up pressure and start the 6-minute countdown).
When the cooking time is complete, let the Instant Pot release pressure naturally for 10 minutes then release the rest of the pressure manually.
Remove the lid and stir in the pork, eggs, bacon and vegetables. Place the lid back on and let the pot sit for 5 minutes. The residual heat will warm up the diced pork and veggies.
When ready to serve, stir in the sliced green onions.

Notes
Mirin is a sweet Japanese cooking wine. It adds a delicious complexity to the sauce. You can substitute rice wine vinegar and a pinch of sugar if you don't have mirin. Sherry also makes a decent substitute.
