Fresh homemade pico de gallo with juicy tomatoes, crisp onion, fresh lime, and just the right amount of heat. It takes about 15 minutes to make, plus a short rest to bring the flavors together. Serve it fresh with tortilla chips or your favorite Mexican dishes.
Add the diced tomatoes, onion, jalapeño, serrano, cilantro, garlic, lime juice, and salt to a medium bowl. Gently toss to combine.
Let the pico de gallo sit for 10 to 15 minutes to give the salt and lime juice time to draw out the juices and bring the flavors together.
Stir again, then taste and add more salt or lime juice as needed. Serve right away or cover and refrigerate until ready to use.
Notes
Tomatoes: Roma tomatoes are a good choice because they're meaty and not excessively juicy. If yours release a lot of liquid when diced, drain them in a colander for 5 to 10 minutes. There's no need to remove the seeds unless there's a lot of watery seed gel.Adjust the heat: Jalapeños vary quite a bit in heat. For milder pico, remove the membranes and seeds and leave out the serrano. For more heat, leave the membranes intact and add the serrano.Salt: This recipe was developed using Diamond Crystal kosher salt. If you're using Morton kosher salt or fine table salt, start with less since they're saltier by volume.Storage: Pico de gallo has the best texture the day it's made, but leftovers will keep in an airtight container in the refrigerator for 2 to 3 days. The tomatoes will soften and release more juice as they sit.Serving size: This recipe makes about 4 cups of pico de gallo. One serving is approximately ¼ cup.
