1baguettesliced on a diagonal, 1/2-inch thick (about 20-24 slices)

1jarpreserved roasted red peppers
8ouncessoft goat cheese
4ouncescream cheesefull-fat
2 tablespoonsfresh lemon juice
¼teaspoonsalt
¼teaspoon ground black pepper
2clovesgarlic
4 to 5tablespoonsheavy cream

Instructions
Preheat the oven to 400°F.
Place the slices of bread on a baking sheet and brush olive oil on them lightly. Slide the baking sheet in the oven and toast just until slightly browned and crisp. Remove from the oven and allow to cool slightly.
Drain the liquid from the jar of peppers and lay them on several thickness of paper towels and blot dry. Cut the peppers into pieces to fit the slices of toast.
Add the goat cheese, cream cheese, lemon juice, salt and pepper to a medium-size bowl. Mince one clove of garlic and toss that in the bowl as well. Use a hand mixer on low speed to beat until creamy and smooth. Beat in the cream until well blended.
When the slices of bread are cool enough to handle. rub each slice with the other clove of garlic.
Spread one tablespoon of the goat cheese mixture on each slice of toast, add slices of the red pepper and top with a sprig of fresh thyme. Arrange the appetizers on a serving plate and enjoy!

Notes
Whip the goat cheese mixture until smooth, adding a tablespoon or so of cream if necessary.
Garnish the appetizers with any fresh herb such as chopped basil, parsley leaves, snipped chives or whatever fresh herb you have on hand.
