Wing sections: Turkey wings have three parts: the tip, the flat, and the drumette.
What you’ll see in the video: The wings we used had the tips removed, so each wing was cut into two pieces (flat and drumette).
Buying tip-free wings: Tips don’t have much meat, so it’s usually more economical to buy wings without them. If your wings still have tips, you can ask the butcher to remove them.
Pan size matters: If you’re cooking more than three wings, or you’re including the tips, use a larger baking dish.
Baking sheet option: A rimmed baking sheet works fine as long as the sides are about 1 inch high.
