Mushroom Pizza with Garlic Sauce

This mushroom pizza is slathered with a white garlic sauce and topped with two kinds of cheese. It is a garlic and mushroom lovers feast.

Ingredients

  • 2 tablespoons olive oil
  • 16 ounces mushrooms cleaned and thinly sliced
  • Pizza dough store-bought or homemade
  • 1-1/2 cups of homemade White Garlic Sauce
  • 1 cup packed fresh spinach leaves
  • 1 tablespoon Italian Seasoning
  • 1 cup pitted Kalamata olives sliced
  • 4 ounces bottled roasted red peppers sliced
  • 1-1/2 cups shredded Mozzarella cheese
  • 1 cup grated Parmesan cheese

Instructions

  • Preheat the oven to 450°F.
  • Add the olive oil to a skillet set over medium heat, add the mushrooms and sauté for 5-6 minutes until browned.  Remove from the heat and transfer to a plate to cool.
  • Dust your pizza peel with flour or cornmeal.  Flatten the disk of pizza dough and roll the dough into a 14-inch round. 
  • Spread the white garlic sauce on the rolled pizza dough and sprinkle with the Italian seasoning. Add the cooled mushroom slices, spinach leaves, and olives.  Arrange the red pepper slices on top.
  • Cover the filling with the Mozzarella cheese and sprinkle the grated Parmesan over the top.
  • Transfer from the pizza peel to a pizza stone and place into the oven.  Bake for 15 to 20 minutes, remove from the oven, slice, and serve immediately.

Notes

The backside of a baking sheet makes an excellent substitute for a pizza peel.  The baking sheet with the pizza can go directly into the oven and eliminates the need to transfer the pizza from the peel to a pizza stone.
