Pea Shoots Salad

This pea shoots salad has a mild pea flavor from pea shoots. Baby mint leaves, carrots, and Parmesan cheese make this a delicious spring time salad.

Ingredients

  • 4 cups fresh pea shoots
  • 1 cup fresh mint leaves loosely packed
  • 4 radishes thinly sliced
  • 2 carrots scrubbed clean
  • 2 ounce chunk of Parmesan cheese

Vinaigrette

  • 3 tablespoons lemon juice
  • 3 tablespoons non-fat Greek yogurt
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons honey
  • 1 garlic clove finely minced
  • ¼ teaspoon salt
  • freshly ground black pepper

Instructions

Salad

  • Place the pea shoots, mint, and radish slices in large serving bowl. Run a vegetable peeler down the length of the carrots, shaving off long ribbons into the bowl and toss with the greens. Use a vegetable peeler to shave thin pieces of Parmesan over the top.

Vinaigrette

  • Whisk the vinaigrette ingredients together in a small bowl or shake in a container with a tight lid. Drizzle over the salad when it is time to serve. Season with additional salt and pepper as desired.
