Notes
Serve promptly: This salad is best served shortly after it is assembled. Watermelon releases juice as it sits, which can make the salad watery.Choose good feta: Block feta packed in brine has a creamier texture and better flavor than pre-crumbled feta. You can cube it or crumble it for the salad.Mind the salt: Greek feta is naturally salty, so taste the salad before adding any extra salt.Tear the mint: Tear the mint leaves instead of chopping them with a knife. This helps prevent bruising and discoloration.Make it your own: Add sliced Kalamata olives, thinly sliced red onion, or chunks of English cucumber for extra flavor and texture.Try a different finish: For a sweeter twist, replace the lemon juice with a drizzle of thick balsamic glaze.
