Matcha Brownies

These matcha brownies are fudgy and chewy with a delightful earthy green tea flavor. Cocoa butter from melted white chocolate gives them a brownie-like texture without muddling the color of the vibrant green tea.
You can keep them plain or stir in white chocolate chips or dark chocolate chips for a delicious indulgence. No matter how you enjoy them, they are sure to be a hit!

Ingredients

  • 10 tablespoons butter
  • 6 ounces white chocolate chopped (170 grams)
  • 1-⅓ cup granulated sugar 270 grams
  • 3 eggs room temperature
  • 1-½ teaspoons vanilla extract
  • 1-¼ cups all purpose flour 150 grams
  • 3 tablespoons matcha powder 15 grams
  • ¾ teaspoon salt
  • 1-½ cups chocolate chips or chopped chocolate white chocolate or dark

Instructions

  • Preheat the oven to 350°F and line an 8x8 inch baking pan with parchment paper.
  • Place the butter, and chopped white chocolate in a microwavable bowl. Microwave on low power in 15 second bursts until the white chocolate is about 80% melted. Remove from the microwave and stir until the chocolate is completely melted. 
  • Stir in the sugar. Beat the eggs in one at a time then stir in the vanilla extract. 
  • Sift the flour, matcha powder, and salt over the batter and stir until well blended. Fold in the chocolate chips. 
  • Spread the batter into the prepared pan. Bake for 38 to 42 minutes. The top will be light brown and slightly cracked, and the edges will appear set. A toothpick inserted in the middle should have some moist, sticky crumbs (the toothpick shouldn’t be wet, but a few moist crumbs are fine).  

Notes

  • Since matcha pairs well with white chocolate and dark chocolate, choose your favorite to fold into the batter. 
  • The color and flavor of the cookies will vary depending on the quality of the tea powder you use.  
  • Ceremonial-grade matcha will have a brighter green color and milder, sweeter flavor than culinary matcha, but it is expensive. Culinary-grade matcha powder varies in quality from brand to brand. Some culinary brands are muddy brown in color and bitter in flavor.
