Instant Pot Adzuki Beans

Cook dried adzuki beans in less than half the time with an Instant Pot. These beans have a nutty, slightly sweet flavor that go well with savory or sweet recipes.

Ingredients

  • 3-¾ cups water or chicken broth
  • 1 pound dry Adzuki beans
  • 2 whole bay leaves
  • 1 teaspoon salt

Instructions

  • Rinse the dried beans and pick out any pebbles if you find them. 
  • Add the water or broth to the pot, toss in the adzuki beans, bay leaf, and salt.  
  • Seal the lid and cook on high pressure for 21 minutes (23 minutes if you want them soft enough to mash).
  • Let the Instant Pot release pressure naturally, about 15 to 20 minutes. 
  • Remove the bay leaves, taste the beans and add more seasoning if needed.
