With an immersion/stick blender, add everything to a pint Mason jar, except the salt and pepper. Blend the mixture using an up/down motion until the vinaigrette emulsifies. Remove the stick blender and add salt/pepper to taste.
Option:
In a small dish, whisk together all the ingredients except the olive oil, salt and pepper. Slowly, drizzle in the olive oil while whisking continuously until the vinaigrette emulsifies and thickens. Taste and add salt/pepper.
