Liptauer Cheese Spread

This highly seasoned Slovakian cheese spread is best if you make it 8 hours in advance to give the flavors time to intensify. It is perfect for bagels and crackers but also gives sandwiches a special twist.

Ingredients

  • 6 ounces goat cheese or sheeps milk cheese softened
  • 4 tablespoons butter softened
  • 1-1/2 teaspoons paprika
  • 2 teaspoons capers drained
  • 2 anchovy fillets chopped or smashed into a paste
  • 2 tablespoons minced shallots
  • 1/2 teaspoon caraway seeds
  • 1/2 teaspoon each of salt and pepper

Instructions

  • Combine the goat cheese and butter in a mixing bowl. Beat with an electric mixer until smooth and creamy.
  • Add the rest of the ingredients and beat until well combined.
  • Pack the cheese spread into a serving dish and cover with plastic wrap. Refrigerate for 8 to 12 hours to let the flavors develop.
  • Allow the cheese spread to come to room temperature before serving.
