Red Radish Salad
The Cucumber Radish Salad is a refreshing and crunchy salad that can be prepped in 10 minutes. It has cool cucumbers, crisp radishes, fresh herbs, and a tangy vinaigrette. The creamy feta cheese topping adds a rich flavor to the salad.

Ingredients
Vinaigrette
¼
cup
olive oil

tablespoons
lemon juice

teaspoon
Dijon mustard
1
garlic clove
finely minced
½
teaspoon
each of salt and pepper
For the Salad
2
English cucumbers
thinly sliced
2
bunches of red radishes
thinly sliced
½
of a red onion
thinly sliced

tablespoons
chopped dill
2
tablespoons
chopped chives or scallions
1
tablespoon
chopped mint
1
tablespoon
chopped tarragon
2
tablespoons
crumbled feta cheese
Instructions
Make the Vinaigrette
Add the oil, lemon juice, Dijon, garlic, salt, and pepper to a jar and shake well.
For the Salad
Slice the cucumbers, radishes, and red onion very thinly and toss in a large mixing bowl. Toss in the dill, chives, mint, and tarragon.
Add the vinaigrette and toss everything together.
Sprinkle the crumbled feta on top and serve.
Notes
A mandolin works well for slicing the veggies very thinly, but we recommend using cut resistant gloves.
