Warm German Potato Salad Recipe

Old Fashioned German Potato Salad features crispy bacon, red onion, and is tossed in a tangy Dijon vinegar dressing. It is a versatile salad that you can serve hot or cold. Old Fashioned German potato salad recipe

Ingredients – 5 pounds of Yukon Gold potatoes, scrubbed but not peeled – ¾ pound bacon, finely diced – 1 cup finely chopped onions – 1 tablespoon flour – 1 tablespoon sugar – 1/3 cup white wine or cider vinegar – 1/3 cup water or chicken broth – ¾ teaspoon salt – ¼ teaspoon freshly ground black pepper – 3 tablespoons finely chopped parsley

The vinegar adds a tangy flavor and soaks into the potatoes to season them perfectly.  This type of potato salad is a great alternative to the classic mayonnaise-based version.

Why put vinegar on potatoes for potato salad?

After you cook the bacon, saute the onions in the bacon fat. The onions will soak up all that bacon goodness and add even more flavor to the German potato salad. It's a  great way to use up bacon fat if you normally discard it.
