Pineapple Mango Salsa

This vibrant fresh pineapple mango salsa is a little sweet from the mango and pineapple and packs some heat from the chili peppers. Sweet and juicy pineapple meets tangy mango, spicy peppers, and herbs for a tropical medley of flavors that’s simply hard to resist. Ingredients – 2 to 3 large fresh mangos, chopped – 2 cups fresh or canned pineapple chunks – ½ medium onion, diced – 1 large red bell pepper, chopped – 1 fresh serrano chili pepper, seeded and finely chopped – 1 fresh jalapeño chili pepper, seeded and finely diced – 3-4 fresh green scallions, white and green, chopped – 2 tablespoons chopped fresh cilantro – ¼ teaspoon sea salt – 2 fresh limes, juiced – Cilantro sprigs for garnish

Add all chopped ingredients to a large bowl and sprinkle with salt. Tip: red pepper gives the salsa a splash of vibrant color, but you can use orange or green bell pepper.

Pour lime juice over the mixture, toss, then transfer to a serving bowl.

Let the flavors marinate. If you have time, try to make the salsa 20 to 30 minutes in advance. That will give time for the flavors to mingle, and the dish will taste even better!

Customize the heat level: Adjust the spiciness of the salsa by adding more or less chili peppers. If you prefer a milder salsa, remove the seeds and membranes from the peppers before adding them.
