Tuna Stuffed Tomatoes

These tuna stuffed tomatoes are loaded with Mediterranean flavors from lemon juice, capers, olives, and crisp bell peppers. Forget about mayonnaise – these salads provide all the healthy flavors you crave in a healthy, low-fat meal.

Ingredients

drain the can of tuna and place it in a mxing bowl.

Step One

slice the tops off the tomatoes and scoop the pulp out. 

Step Two

Combine al the ingredients in a mixing bowl. Taste the mixture and season as desired. Since the capers and olives have a salty flavor, you may not need salt. 

Step Three

Pile the tuna salad mixture into the hollowed-out tomatoes. Depending on the size of the tomatoes, you can fill 4 to 6 tomatoes. You can even fill cherry tomatoes  if you want little bite sized appetizers.
