For the Salad – 2 English cucumbers, thinly sliced – 2 bunches of red radishes, thinly sliced – ½ of a red onion, thinly sliced – 2 tablespoons chopped dill – 2 tablespoons chopped chives or scallions – 1 tablespoon chopped mint – 1 tablespoon chopped tarragon – 2 tablespoons crumbled feta cheese

Slice the cucumbers and radishes very thin, preferably with a mandoline slicer so they are uniform. (Watch your fingers or wear a mandoline glove!)
In a large bowl, add the cucumber, red onion slices, and radishes. Toss in the fresh dill, chives, mint and tarragon.
Pour the vinaigrette over the cucumber radish salad and toss well to combine. Transfer to a serving bowl if desired, and sprinkle the crumbled feta on top. If you don’t want to make a dressing, simply use your favorite store bought vinaigrette.
