Cookie Monster Cookies

These bright blue Cookie Monster cookies are loaded with chunks of crushed cookies, chocolate chips, and white chocolate chips then they get stuffed with more cookies (because you can never have enough cookies). They’re big, soft, and chewy, with a little crunch from the cookie pieces.

Ingredients – 1/2 cup butter, softened – 1/2 cup packed brown sugar (105 grams) – 1/2 cup granulated sugar (100 grams) – 2 teaspoons vanilla extract – 2 eggs – 1/2 teaspoon Royal Blue gel food coloring – 2-1/3 cups bread flour or all-purpose flour (280 grams) – 1-3/4 teaspoons baking pow der – 1 teaspoon baking soda – 1 teaspoon salt – 1 cup crushed cookies (I used Oreos and Chips Ahoy) – 1/2 cup white chocolate chips – 1/2 cup milk chocolate chips

1. Combine the butter, brown sugar, granulated sugar, and vanilla extract in a large mixing bowl. Beat on medium speed for about 6 to 8 minutes until soft and fluffy. Stop the motor and scrape down the bowl half way through the mixing time.

Step 1

1. Next, mix in your food coloring and sift in the dry ingredients (no need to use a separate bowl if you have a sifter). 2. Stir the dough on low speed until all the ingredients thoroughly combine.

Step 2

1. Remove the mixing bowl and use a rubber spatula to fold in the crushed cookies and chocolate chips. 2. Use a large cookie scoop to make a dozen cookie dough balls. 3. Press a square of milk chocolate or a whole cookie into the center of each cookie, then add more cookie dough on top to cover the filling.

Step 3

 1. Pinch the edges of the cookies to ensure they have a tight seal, then press candy eyeballs and extra chocolate chip cookie pieces on top. 2. Chill your cookies in a fridge for at least three hours.

Step 4

These Cookie Monster Cookies are as blue as the Sesame Street character and they are stuffed with Oreo cookies. You can make about 10 monster-sized cookies with this recipe or stuff them with mini Oreos to get about 20 standard-sized cookies. Large cookies will need to bake longer.
