This cauliflower chicken soup is super quick and easy to prepare. Ingredients – 1 large head cauliflower, cut into florets – 1 large white onion, thinly sliced – 2 tablespoons olive oil – ½ teaspoon salt – ½ teaspoon ground black pepper – 6 strips of bacon – 3 large carrots, peeled and diced – 2 celery ribs, diced – 4 garlic cloves, minced – 3 cups chicken broth – 1 can (14 ounces) coconut milk – 1 tablespoon Worcestershire sauce – 1 tablespoon soy sauce – 1-½ cups cooked, shredded chicken
1. Roast the cauliflower and onion in the oven.
1. Cook the bacon in a large pot until crisp and brown. 2. Add the carrots, celery, and garlic to the pot.
1. Transfer the roasted cauliflower and onions to the pot. Add the chicken broth, coconut milk, Worcestershire, and soy sauce.
1. Use an immersion blender to puree the soup. When the cauliflower gets blended, it creates a thick, creamy soup. 2. Add the cooked chicken and bacon bits to the pot and bring the soup to a simmer. Serve the soup with a drizzle of olive oil, lemon juice, or a dollop of sour cream.
