combine the sugar and cornstarch, then add the strawberries, lemon juice and food coloring. Mash the berries lightly with the back of a fork to release some of their juices. Set aside.
In a mixing bowl, add the flour, salt and baking powder and whisk to combine. In a large bowl, whisk together the wet ingredients. Sift the flour mixture into the wet mixture and whisk until combined. Spread the batter in a baking dish.
Spoon the strawberry sauce and juices on top of the cake batter.
