Shrimp Yakisoba

Ingredients – 10 to 12 ounces refrigerated Yakisoba  – 2 tablespoons cooking oil – 6 ounces medium shrimp,  – ½ teaspoon salt – ½ teaspoon pepper – 1 medium onion, sliced – 1 cup broccoli florets – ½ cabbage, sliced – 1 medium carrot, thinly sliced or shredded – ½ red bell pepper, thinly sliced – 2 green onions, sliced – 2 teaspoons minced ginger – 2 garlic cloves, minced

Heat oil over medium heat in a large saucepan or wok, then add the shrimp. Cook for 1-½ to 2 minutes per side, then transfer the shrimp to a plate.

Add the onion and broccoli florets, sauteing for 1 minute.

Add the cabbage, carrots, and bell pepper and saute for 3 to 5 minutes until the veggies have a tender yet crisp texture. Toss in the green onion, ginger, and garlic and saute for an additional minute.

Add the noodles to the skillet and toss them with the veggies. Stir for 1 to 2 minutes until the noodles get hot.

Step 4

Toss in the shrimp and the yakisoba sauce and stir until combined. Substitutions and Variations You can add any vegetables you have on hand. Some suggestions include shiitake mushrooms, zucchini, bean sprouts, bok choy, and snow peas. Another delicious garnish is furikake seasoning which is made from sesame seeds and seaweed flakes.
