There is a fresh chocolate covered strawberry inside these no bake cheesecakes. Everyone gets their own little cheesecake with this dessert. Since it is a no-bake cheesecake, it is the perfect dessert for summer when you don’t want to heat up the oven.
Ingredients – 1/2 cup heavy cream – 8 ounces dark chocolate, finely chopped – 6 large strawberries Cheesecake filling – 1/4 cup cold water – 1 tablespoon powdered gelatin (1-1/2 packages) – 3 packages (8 ounces each) of cream cheese, softened – 1-1/2 cups powdered sugar – 2 teaspoons vanilla extract – 1/2 teaspoon salt – 2-1/4 cups heavy cream
Make the graham cracker crust and press it into the bottom of the mini cheesecake tins. We used a special cheesecake pan with removable bottoms for these mini no-bake cheesecakes.
Dip the strawberries in a thick ganache. If you dip them in melted chocolate the chocolate will get too hard to slice through the cheesecakes easily. The ganache keeps the chocolate covering soft and sliceable.
Place the chocolate covered strawberries inside the miniature cheesecake tins. Pipe the no bake cheesecake batter around the strawberries and fill the tins to the top. We used plastic acetate liners to make the cheesecakes tall enough to cover the strawberries.
