Caramel Billionaire bars

Billionaire bars are a rich, decadent treat made with layers of chocolate and caramel. A layer of shortbread is topped with sweet and salty caramel, coated in chocolate ganache, and sprinkled with sea salt for a delightful crunch. 

– flour – granulated sugar, brown sugar – salt – butter – sweetened condensed milk – cream – corn syrup – 1 tablespoon vanilla – dark chocolate – heavy cream

Billionaire bars may seem complex, but this easy recipe is perfect for bakers of all levels! They taste like a homemade version of a classic Twix bar, but even better 😉 These decadent bars work for any occasion, including dessert platters, Christmas cookie trays and birthday treats. 

Start by making the shortbread crust. Spread the dough in the bottom of the pan and press it down. Then, use a fork to pierce the dough at 1-inch intervals. Bake the crust until it turns golden brown.

Make the salted caramel layer. Add the condensed milk, sugar, cream, syrup, and butter to a saucepan. Cook until it reaches 236-239°F, about 20 minutes. Stir in the vanilla and salt. Pour the salted caramel over the warm crust. Cool completely.

1. Heat the cream in a small saucepan. 2. Pour the hot cream over the chocolate. Cover the bowl and let it sit for 5 minutes, then stir. 3. Pour the chocolate over the salted caramel filling. Let sit for 5 minutes, then sprinkle the surface with large salt flakes.

Slide a thin, sharp knife along the long sides of the pan to loosen the shortbread. Use the parchment paper ends to gently lift the shortbread out.

– Store billionaire bars in an airtight container in the refrigerator. You can let them sit at room temperature for a few minutes before enjoying.
