Pistachio Cherry Cookies

These pistachio cherry cookies are divine! The combination of dried tart cherries, dark chocolate, and pistachios is an absolute winner. – sugar, brown sugar (70 grams) – butter,  olive oil – eggs – 1 teaspoon vanilla extract – flour , baking soda,  salt – dried cherries – pistachios, roughly chopped – dark chocolate (70% cocoa), finely chopped**


beat the butter and sugars along with the vanilla extract, then add the eggs and blend well.

Mix in the flour. I like to use a sifter and sift the flour and leavening over the cookie dough.  That ensures that the baking soda or baking powder will not stay in little clumps in the dough.

Mix in the pistachios, dried cherries, and chopped chocolate. Blend well then use a small cookie scoop to form balls of cookie dough.

Press the balls of dough into chopped pistachios then set them on a cookie sheet. Bake the cookies until the edges are light brown. Cool them on the baking sheet for 5 minutes before transferring them to a cooling rack.
