chocolate covered strawberries in a cheesecake

These no-bake cheesecakes are heavenly! A velvety vanilla cheesecake rests on a buttery graham cracker crust. But what elevates them is a fresh strawberry dipped in chocolate is nestled in the center. An unexpected and delightful treat! If you haven't tried cheesecake with strawberries inside, you are in for a real treat. With every bite, you get a burst of fruity flavor and sweetness. It's an irresistible dessert that will add a special touch to any meal. 

Ingredients – 1/2 cup heavy cream – 8 ounces dark chocolate, finely chopped – 6 large strawberries Cheesecake filling – 1/4 cup cold water – 1 tablespoon powdered gelatin (1-1/2 packages) – 3 packages (8 ounces each) of cream cheese, softened – 1-1/2 cups powdered sugar – 2 teaspoons vanilla extract – 1/2 teaspoon salt – 2-1/4 cups heavy cream

Make the graham cracker crust and press it into the bottom of the mini cheesecake tins.  We used a special cheesecake pan with removable bottoms for these mini no-bake cheesecakes. 

Step 1

Mix the chocolate and cream to make a thick ganache. You need to cover the strawberries in chocolate ganache instead of plain melted chocolate because the ganache will be soft enough to slice into. 

Step 2

Dip the strawberries in chocolate ganache then set them aside until the chocolate firms up. You can place them in the fridge. 

Step 3

Mix the no-bake cheesecake batter. This recipe uses powdered gelatin to keep the structure of the cheesecake.

Step 4

Place the chocolate covered strawberries inside the miniature cheesecake tins.  Pipe the no bake cheesecake batter around the strawberries and fill the tins to the top.  We used plastic acetate liners to make the cheesecakes tall enough to cover the strawberries. 

Cheesecakes stuffed with chocolate-covered strawberries make a special dessert that is so fun to eat.  The smooth, rich, chocolatey texture of chocolate ganache is the perfect solution for hiding chocolate-covered strawberries inside a creamy cheesecake.
