Honey Lemon Dill Salmon

This honey lemon dill salmon is a fast and easy dinner. You can make the dill compound butter in advance. Then when you are ready to cook the salmon, you can have dinner on the table in less than 20 minutes. The salmon is flaky, tender, and infused with sweet honey, tangy lemon, and fragrant dill flavor. It’s a dish that looks and tastes fancy but is quite effortless to make.

Salmon is one of my ‘go-to’ choices any time I need to put a quick dinner on the table and today we are broiling wild Alaskan sockeye salmon fillets with a honey-lemon glaze and a compound butter of lemon and dill.

What is Compound Butter?

Compound butter is basically butter mixed with any other flavors such as shallots, garlic, fresh herbs, zests of lemons or any creation you dream up.  It is mixed together, shaped and wrapped in parchment paper or plastic wrap and stored in the fridge until needed.

Compound butter adds a rich, flavorful topping to warm veggies as well as meats or in this case on our lovely honey-glazed sockeye salmon fillets.

Sockeye is Don’s favorite salmon, and this broiled honey dill salmon with compound butter will put a smile on his face. 

The cold waters of the Pacific Northwest have a great supply of wild sockeye salmon.  This delicious salmon is a fatty fish, rich in the Omega-3 healthy fat, and has a firm, deep reddish-orange flesh.

  • Compound butter: you will need butter, dill, and lemon zest.
  • Honey
  • Lemon juice
  • Garlic
  • Salt and pepper
  • Salmon fillets

How to Make Honey Lemon Dill Salmon

  1. Make the dill compound butter and the honey lemon glaze.
  2. Preheat the broiler and coat a baking sheet with non-stick spray.
  3. Place the salmon skin side down on the baking sheet and brush the salmon with the glaze. Transfer the baking sheet with the salmon to the oven and broil until the fish flakes easily when tested with a fork.
  4. To serve, transfer the salmon fillet to individual serving plates and place a thin slice of the lemon-dill butter on each serving. Garnish with microgreens or snipped dill.

  Substitutions and Variations

Add some heat – For a spicy kick, add red pepper flakes or cayenne pepper to the honey lemon glaze.

Try different herbs – While dill is the star of this recipe, you can experiment with other herbs such as parsley, thyme, basil, or cilantro. You can also use a combination of herbs to create your own unique flavor.

Grill instead of broil – If you prefer to grill your salmon, you can skip the broiling step and grill the fish instead. Just brush the salmon with the honey lemon glaze and grill it over medium-high heat until cooked through.

Ingredients

For the Lemon-Dill Butter:

  • 1/2 cup butter softened
  • 2 tablespoons finely chopped fresh dill
  • zest of 1 lemon

For the Honey-Lemon Glaze

  • 4 tablespoons honey
  • 1 tablespoon fresh squeezed lemon juice
  • 1 garlic clove grated
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper

For the Salmon:

  • 4 salmon fillets
  • Juice of 1 lemon
  • 1/2 teaspoon sea salt
  • Freshly ground black pepper

Instructions

For the lemon-dill butter:

  • In a small dish, add the butter, dill and lemon zest. Use a spatula to combine all of the ingredients well.
  • Transfer the mixture onto a piece of parchment paper. Roll into a log and twist the ends shut. Place in the refrigerator for 2 hours, or until the butter is firm.

For the Honey Lemon Glaze:

  • In a small dish, add the honey, lemon juice, grated garlic, salt, and pepper. Stir to combine.

For the Salmon Fillets:

  • Preheat the broiler for at least 5 minutes, and coat a baking sheet or broiler pan with non-stick spray.
  • Place the salmon skin side down on the baking sheet, and using a pastry brush apply a coating of the glaze to each fillet. Transfer the baking sheet with the salmon to the oven and broil 6-8 minutes, or until fish flakes easily when tested with a fork and is still a bit translucent when flaked. Do not overcook.
  • To serve, transfer the salmon fillet to individual serving plates and place a thin slice of the lemon-dill butter on each serving. Garnish with microgreens or snipped dill.
